Ozone treatment to reduce bacterial contamination on beef carcasses surfaces.

ABSTRACT

Effectiveness, of low concentrations of ozone on reducing the total plate count (TPC) on 40 vaccinated bovine carcasses surfaces with 30 hours ripening was studied. Only the treated carcasses showed reduction in the TPC(-2.55 log ufc/cm2), while the control group showed increments in the TPC, from 1.13 to 3.47 log ufc/cm2, pre and post the 30h ripened respectively(p ‹ 0.0001). Additional studies are needed to measure the impact of the ozone treatment over meat quality; but the results from this paper indicate that it reduces the TPC from the bovine carcass surface during the post sacrifice chilling storage.
