ABSTRACT

The objective of the present work was to test if dehydrated milk of three commercial brands that are expended in Mexico City is adulterated with dairy cheese whey by means of the poliacrilamide SDS gel electrophoresis technique. The study was carried out in the Laboratory of the Preventive Medicine and Public Health Department of the Veterinary Faculty. From the milk samples (n = 108) obtained, 14.81% were positive. Considering the results, it is concluded that these commercial milk brands do not accomplish the guidelines established by the Regulation of the General Law of Health of Sanitary Control of Products and Services.
