Panorama de la educación bioquímica en la licenciatura en nutrición en México

ABSTRACT

We studied the curricular design of the nutrition programs from the affiliated institutions to the Mexican Association of Members of Schools and Nutrition Faculties with the purpose of analyzing the characteristics of the biochemical education, the graduate profiles, the courses outline and the study programs were analyzed. Among the most important results, the following ones were obtained: in the graduate profiles generally there are not clearly explicit the formation in biochemistry; however, in most of the study plans two subjects related with this science are included, the first have as general objective the study of the structure and function of carbohydrates, proteins, lipids, vitamins and organic nutriments. The second objective is related with metabolism. Although the objectives and the contents are similar in all the analyzed institutions, the time to cover them is very heterogeneous among the different schools for what is convenient to considerer to establish the appropriate time for the biochemical education in the works of curricular evaluation of each educational institution.
