ABSTRACTChia contributes to the care of the skin, the largest organ of the human body and first line of defense, this seed is an oleaginous plant, constituted of 40% oil, 20% protein, it has no cholesterol and has biologically important minerals such as calcium, iron, magnesium, phosphorus and zinc. Furthermore, it consists of significant amounts of dietary fiber, amino acids, antioxidants and vitamins; which contribute to the care of the skin of the human body’s largest organ. The most precious of this seed is that of all the fatty acids that make up 60% alpha linolenic esácido better known as omega-3, so it is considered as the most important source of this acid and an excellent cardioprotective. Added to this, the amount of saturated fatty acids that compose is minimal and the amount of antioxidants that has not allow rapid oxidation of polyunsaturated fatty acids have value both for health. On the other hand, prevents inflammatory and anti-aging thanks to the content of omega-3 effects, prevents the development of cancer, prevents constipation and contains very few calories per serving. With the added benefit of contributing to maintain the skin in good condition by favoring cell proliferation and synthesis of collagen fibers. For all these reasons and more, it is that this type of foods that are not widely used, which are of great nutritional value and low economic value, encourage restart their consumption and rediscover some forgotten resources to achieve healthy eating and prevent disease low cost and easily.
