ABSTRACT

Celiac disease is defined as a gluten-sensitive enteropathy that occurs in genetically predisposed people. In recent years there has been an increase in the prevalence of disorders related to the intake of gluten, a protein found in different cereals such as wheat, barley and rye. Celiac disease is a multisystemic disease that, if not diagnosed in time, can lead to multiple long-term complications.
